Ingredients
  • 1 cup chopped (processor) scallops
  • 1 teaspoon fresh parsley
  • 1 teaspoon fresh cilantro
  • 1 teaspoon chives
  • 1 egg
  • 1/2 cup mayonnaise
  • 2 teaspoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup chopped celery
  • 1 teaspoon chopped shallot
  • 1/2 teaspoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon olive oil
  • Bread crumbs until lightly thick
Method
  1. Mix all ingredients lightly in a mixing bowl
  2. Pan fry with olive oil until golden brown on both sides
  3. Place cakes on a baking sheet at 350 for 5-7 minutes
  4. Serve with lemon wedge and cilantro-lime mayo spread (mayo, lime juice, salt, pepper and cilantro)
